Distilling Local Spirit
We want every gin to distill the spirit and history of the place which inspired it. Each wild botanical is chosen both for the story it tells and the flavour it brings. For example, in Four Rivers of Hertford Gin, a different botanical represents each of the four rivers which meet and merge in Hertford.
Wild Foraged Botanicals
Resident forager Richard gathers many of our botanicals from the hedgerows and ancient woodlands which surround our distillery. Our gins showcase the amazing flavour potential of these ingredients in all kinds of traditional and experimental ways
Historical Setting
Our buildings were originally a Victorian stable and later a saddlemaker’s workshop. A years-long restoration project has uncovered many original features – like the original hoof-worn stone stable floor – and unearthed countless bags of leather and brass tack and bridles.

WhO ARE WE?

Richard Daniel - FOunder/Director
With gin-making, Richard has allowed an early-retirement hobby to become an all-consuming passion and second career. He even rebuilt and refurbished our historical Victorian stable building by hand.
Richard Osmond - Head Distiller and Forager
Richard is the head distiller. He’s also an expert forager of wild botanicals. His recipes weave together folklore, history and wild flavour to take drinkers on a magical journey.
Tippi - Gin Hound
Tippi is the official distillery dog. Find her napping in the spirit boutique most days. Rare wakeful periods are spent with our resident forager Richard, scouring the forests for new and exciting aromas.

Where ARE WE?
The OlD Saddlery, Coleman Croft
The distillery, spirit boutique and gin school can all be found in our historic stable buildings at Coleman Croft, between St Albans, Welwyn Garden City and Hatfield. (AL4 9HJ). The Croft is also home to our friends Osprey and the JJAM restaurant.
