An authentic 70% abv absinthe, distilled to a historic recipe and infused with wild foraged botanicals including fennel, angelica, herb alexander, sweet cicely, and the classic absinthe herb Artemisia absinthium or grand wormwood - for true complexity and hints of herbal bitterness.
Historical absinthe was sometimes called the "Green Fairy". We have named ours "Green Man" in tribute to another mythical creature: the legendary Green Man, the spirit of the woods. And our absinthe truly is a spirit of the woods: every one of its unique botanicals and herbal infusions are all foraged from the woods and hedgerows of Hertfordshire, within walking distance of our distillery.
The traditional way to enjoy absinthe is to louche it. Add a small measure to a glass, then allow ice cold water to drip slowly into the glass until the clear emerald coloured liquid turns a paler milky green.
